Mini Cakes!
I am ALL about pumpkin right now... I just can't get enough.
I also love things in a mini version... I guess I don't feel as guilty eating it.
Mini chocolate cakes (2 tier) with pumbkin buttercream in the middle, drizzled with brown butter sugar, topped with pumpkin buttercream and sprinkled with roasted walnut crunch! YIKES, I need to hit the gym!

Happy Birthday, ANDREA!
HAPPY BIRTHDAY to Andrea, one of the nicest people I have EVER met!

(My favorite picutres of Andrea are the ones when she is L'ingOL! Love it!)
For Andrea's cake this year I decided on an Almond Joy Cake. We (Christine too) recently had a discussion on Almond Joy Candy Bars and decided that we LOVE them.. (we usually only eat/talk about peanut butter desserts!) I still wanted to make it really really "cute" so I went with the "petal effect!" I am big on height (height of cakes that is....) I like my cakes TALL... I just think they look so elegant. This was 6" round and almost 9" tall. SO pretty...almost too pretty to eat (LOL!) Each layer was chocolate cake filled with an INSANE coconut concoction, frosted with a vanilla buttercream and topped with sliced
almonds! I had 2 pieces and vowed to NEVER eat again!
My iPhone takes the worst pictures (and we blamed the waitress!), HELP!
I can creatively bake... technology is NOT my thing!
Regardless, we had a great night... great company!

Five Shades of Pink!
Can I be a geek for a second or two.... I thought about this cake for days and days (all day)... Couldn't wait to make it, but had NO idea what I was going to do. It was for a client who often (maybe even always) lets me do what I want (love that!) She gives me ideas (good ones!)/info on the type of event and then I take it from there. I knew pink needed to be involved, ruffles were a MUST, and all the layers inside needed to be different shades of pink (LOVE that too!). I LOVE tall cakes, love them! This is 6 inches wide and 8 or 9 inches tall. I used a light pink vanilla buttercream between each layer and an off white marshmallow buttercream for the ruffle. and now....some fun stuff... the fondant flowers - By trial and error; they came out perfectly ~ exactly what I wanted! I used 3 shades of pink and off white (trust me; it matters) fondant! The cake was so delicate and gorgeous (fit for a princess; no doubt!) This could be my ALL TIME FAVORITE (actually, I think it is!) Now I have to patiently wait for the event, which is tonight, to see what the inside looks like... tick tock, tick tock....
